Tarte aux Pommes

Ingredients: 250 g shortcrust 1000 g apples 150 g sugar 1 coffee spoon cinnamon 3 soup spoons milk 15 cl cream (crème fraiche) 2 eggs powdered sugar vanilla sugar cinnamon Preparation: 1. Roll out dough, butter a springform and line with dough (including a small edge). 2. Peel apples, quarter, core and cut evenly lengthways to reduce baking time. 3. Spread the apples circular on the dough and sprinkle with sugar and cinnamon. 4. Bake for 25 min in a very hot oven. 5. When the apples are baked, top with egg mass, cream and vanilla sugar. 6. Bake for 20 min. 7. Let the cake cool and sprinkle with powdered sugar and cinnamon. Eat lukewarm or cold. Source of Recipe: Sent in by Günther via Postcrossing

Apple Pastry

Ingredients: 2 shortcrust pastries (you can do it yourself as well but it will take a little bit longer) Apples, quite "hard" ones if possible; about 4 or 5 (according to your taste) Sugar (I personally like to use brown sugar) Juice of a yellow lemon Cinnamon Butter Some flour An egg yolk A little bit of water Preparation: 1. Cut the apples in slices or dices, as you want. Keep in mind that you'll need to bake them after ! So think about the size of saucepan. 2. Prepare your saucepan. Melt some butter in it, with a little bit of sugar (according to your taste but I don't usually ad a lot, fruits' sugar is enough to me). Gently add your apples; plus the lemon juice, and let it cook on a low fire. 3. Stir your apples time to time so they all cook the same way. Once you have a kind of "juice" in your saucepan, you can add some flour (like 2 and a half spoon) so you will have something thicker. Then add cinnamon. Once you're happy with the

French Apple Pie

Ingredients: Dough 250 g flour 125 g butter 1/2 glass of water Filling: Apples 20 cl crème fraîche 2 eggs 25 g almond powder Preparation: 1. Mix all ingredients for the pastry dough and roll it out. Put it into a mold. 2. Slice and peel the apples and put them on the dough spread in the mold. 3. Mix crème fraîche, eggs and almond powder for the cream. Pour over the apples. 4. Crumble crust

Ingredients:  4 big apples 100 g of buckwheat flour (or  a mix of 50 g wheat and 50 g buckwheat) 70 g of coconut oil (adjust to your convenience and the consistency, and you can choose a more "neutral" oil or even some nut purée like almond purée, hazelnut,...) 1 pinch of : cinnamon, nutmeg, ... (or any spices you like, it all depends on your tastes) Preparation: 1. Cut the apples in little equals part, and put it in a deep baking dish. 2. Mix in a bowl the flour, spice, and coconut oil to obtain a sand-like paste. 3. Put it on the apples to cover, and bake for ~20min in oven 180-200°C. 4. If the apples are sweet, they will provide enough sugar for the crumble. Tarte Tatin

Ingredients: A bit of butter Powdered sugar Apples Pastry or puff pastry dough Preparation: 1. Grease the tarte pan and cover with a layer of powdered sugar. 2. Peel the apples and cut into slices. 3. Put the apples into the pan. 4. For caramelisation of the powdered sugar bake for 10-15 minutes at low temperature in the oven. 5. Take out and cover with pastry or puff pastry dough which is a bit bigger than the form. 6. Bake for another 15 minutes. 7. Take out of the oven and let cool for a couple of minutes. 8.
