Apple Pie with Cheddar Cheese crust

Ingredients: Pastry: 2 1/2 cups all-purpose flour 2 tbsp granulated sugar 3/4 tsp salt 1/2 cup each cold unsalted butter and lard, cubed 1 1/2 cup grated sharp Cheddar cheese 1/2 cup ice water (approximately) Filling: 3/4 cups granulated sugar 1/4 cup tapioca starch 2 tbsp lemon juice 2 tsp ground ginger 1 tsp vanilla 1/2 tsp cinnamon 8 cups thinly sliced cored peeled tart baking apples (such as Northen Spy or Granny Smith) Assembly: 1 egg yolk 2 tsp water 1 tbsp coarse sugar Preparation: Pastry: 1. Preheat oven to 425°F. 2. In large bowl, whisk together flour, sugar and salt. 3. Using pastry blender or 2 knives, cut in butter and lard until mixture resembles coarse crumbs with a few larger pieces; stir in cheddar. 4. Drizzle 6 tbsp of the ice water over top, tossing with fork and adding up to 2 tbsp more ice water if necessary to form ragged dough. 5. Knead dough a few times. 6. Julia's Apple Cake

Ingredients: Dough 200 g flour 100 g sugar 125 g butter 1 package vanilla sugar 2 tsp baking powder 1 pinch cinnamon Filling Apples, halved, peeled and pitted 750 g cream 100 g sugar 2 package pudding powder (vanilla) Preparation: 1. Grease a springform pan and sprinkle with breadcrumbs. 2, Make a shortcrust pastry out of flour, sugar, butter, vanilla sugar and baking powder. 3. Roll out the dough and place it in the prepared springform pan (make a small cake edge). 4. Place the prepared apples on the dough. 5. From the remaining ingredients, cook a vanilla pudding and pour over the apples while still hot. 6. Bake at 175°C top / bottom heat for about 60 minutes. Crumble crust

Ingredients:  4 big apples 100 g of buckwheat flour (or  a mix of 50 g wheat and 50 g buckwheat) 70 g of coconut oil (adjust to your convenience and the consistency, and you can choose a more "neutral" oil or even some nut purée like almond purée, hazelnut,...) 1 pinch of : cinnamon, nutmeg, ... (or any spices you like, it all depends on your tastes) Preparation: 1. Cut the apples in little equals part, and put it in a deep baking dish. 2. Mix in a bowl the flour, spice, and coconut oil to obtain a sand-like paste. 3. Put it on the apples to cover, and bake for ~20min in oven 180-200°C. 4. If the apples are sweet, they will provide enough sugar for the crumble. But you can add any sugar you like (honey, treacle, coconut sugar, etc), if you add it, do it during the mixing of the crumble in the bowl. Source of Recipe: Sent in by Dounia via Postcrossing

Finnish apple tart with vanilla sauce

Ingredients: 2 large eggs 100 g sugar 120 g whole spelt flour 1 teaspoon baking powder 75 ml milk 50 ml olive oil 2 apples, cut in half and thinly sliced 1-2 tsp ground cinnamon 1-2 tsp rapadura sugar Preparation: 1. Preheat the oven to 200°C and grease a round 26 cm pie dish. 2. Beat the eggs and the sugar until light and fluffy. 3. Combine the flour and the baking powder in a bowl. Sift the flour into the egg mixture and fold to combine. 4. Mix in the milk and the oil and pour the dough into the pie dish. 5. Arrange the apple slices on top of the dough and sprinkle with ground cinnamon and rapadura sugar. 6. Bake for 20-25 minutes or until a skewer inserted in the middle comes out clean.
