Jewish Apple Cake

Ingredients: 2 lbs. apples, peeled, cored & sliced 1 cup plus 4 tbs. sugar 1 tsp cinnamon grated zest & juice of one lemon 4 eggs 1 cup oil (canola or safflower) 2 cups all-purpose flour 2 tsp baking powder 1 tsp vanilla extract Preparation: 1. Pre-heat oven to 350 F.  2. Grease a 9 x 13 inch pan.  3. In a large bowl, toss apple slices, 4 tbs. sugar, cinnamon, lemon zest & juice together and set aside.  4. In another large bowl, use a mixer or egg beater to beat eggs with 1 cup sugar until thick and lemon colored, and mixture forms a ribbon when beaters are lifted from the bowl, 3 to 5 minutes.  5. Beat in oil until well blended.  6. Stir in flour, baking powder, and vanilla with a spatula until well mixed and smooth.  7. Pour half the batter into the prepared pan.  8. Spoon half the apple slices over batter.  9. Pour remaining batter over the apple slices, then top with the remaining apple slices.  10. Ann's Apple Cake Recipe

Ingredients:   2 eggs 1¹/⁴ cup of oil  1 tsp nutmeg 1-1¹/² tsp of baking soda 1¹/² - 2 cups sugar 3 cups apples  3 cups of all purpose Flour  1-2 tsp cinnamon  2 tsp vanilla 1 tsp salt Preparation: 1. Preheat oven to 350° F. 2. Grease and flour pan. 3. Beat together oil & sugar. Add eggs & vanilla. Blend well.  4. Add flour, baking soda, salt, nutmeg, & cinnamon. Blend well. 5. Fold in apples. New York apple-pie

Ingredients: Dough: 250 g flour 1/2 tsp salt 1 tsp sugar 1 tsp cinnamon 150 g cold butter 6 tbsp cold water Filling: 4 large green apples 1 1/2 tbsp wheat flour 100 g sugar pinch of salt 1 tbsp cinnamon 1/2 tsp ground nutmeg 3 tbsp lemon juice 1 packet vanilla sugar grated lemon peel butter flakes Preparation: 1. Mix together flour with salt, sugar and cinnamon. 2. Cut cold butter into small pieces and add to the flour mixture with a knife till it resembles a crumble texture. 3. Add cold water and knead to a dough. 4. Place in the fridge for one hour. 5. Peel and core green apples and cut into thin slices and then mix with wheat flour, sugar, salt, cinnamon, ground nutmeg, lemon juice and vanilla sugar into a bowl, then add some grated lemon peel and mix well. 6.
