Ingredients:
2 eggs
1¹/⁴ cup of oil
1 tsp nutmeg
1-1¹/² tsp of baking soda
1¹/² - 2 cups sugar
3 cups apples
3 cups of all purpose Flour
1-2 tsp cinnamon
2 tsp vanilla
1 tsp salt
Preparation:
1. Preheat oven to 350° F.
2. Grease and flour pan.
3. Beat together oil & sugar. Add eggs & vanilla. Blend well.
4. Add flour, baking soda, salt, nutmeg, & cinnamon. Blend well.
5. Fold in apples. Batter is thick.
6. Spread batter evenly into cake pan.
7. Bake for 60-65 minutes or until toothpick put in center comes out clean.
Serve warm or cold
You can freeze this cake. Cool completely. Wrap twice in plastic wrap, then in foil before placing in freezer to lock in moisture and prevent freezer burn.
