Brown Betty

Ingredients: 6 cups peeled, cored, sliced apples (use apples that are good for cooking) 3/4 cup granulated sugar 1 1/4 cups all purpose flour 3/4 cup brown sugar, packed 1/2 tsp salt 1/2 cup hard butter, cut up Preparation: 1. Place apple slices in ungreased shallow 3L casserole dish. 2. Sprinkle granulated sugar over top. 3. Topping: In a separate bowl combine flour, brown sugar and salt. 4. Cut in butter until mixture resembles coarse crumbs. 5. Scatter evenly over apple. 6. Press down lightly, 7. Bake, uncovered, at 375° F (190° C) for about 40 minutes, until apple is tender. Baked Apples with homemade vanilla sauce

Ingredients: 4 big apples (Boskoop) 30 g butter + some more 2 tbsp sultanas 2 tbsp rum 40 g hazelnuts 2 tbsp honey 1 level tsp cinnamon 2 egg yolks 2 tbsp sugar Mark of a vanilla pod 1 tbsp food starch 1/4 l milk Preparation:  1. Wash apples, remove core and put into a form greased with butter. 2. Soak sultanas in rum for 10 minutes. 3. Roast hazelnuts and chop roughly. 4. Mix sultanas and nuts with honey and cinnamon and fill into apples, distribute the rest of the filling around the apples. 5. Put flakes of butter on top, cover the form with aluminium foil and bake in the oven for 30 min at 180°C. 6. For the sauce mix egg yolks, sugar and mark of a vanilla pod in a pot and beat with the hand mixer until creamy. 7. Add food starch while stirring. 8. Ingredients: Applesauce with pieces Breadcrumbs Sugar Butter Whipped cream Powdered sugar Preparation: 1. Fill the applesauce into a baking dish. 2. Mix breadcrumbs and sugar. 3. Melt butter in a pan and brown the breadcrumb/sugar mix while stirring constantly. 4. Spread on the applesauce and let cool. 5. Galettes with apples

Ingredients: 250 g buckwheat flour  2 eggs  salt  750 ml cider  3 tart apples  2 tbsp butter  crème fraîche  freshly ground black pepper Preparation: 1. Mix the flour with the eggs, a strong pinch of salt and the cider to a smooth dough.  2. Cover the dough and let it soak for at least 20 minutes. 3. Bake 12 small thin pancakes out of the batter in an ungreased crêpes pan and keep warm. 4. Wash the apples, dry them and cut out the core.  5. Cut the apples into rings and fry them in hot butter until soft. 6. Arrange the apple rings in a bowl.  7. Stir the crème fraîche until smooth and sprinkle thickly with freshly ground black pepper. Öpfel-Chüechli

Ingredients: 1 3/4 dl milk 2 tbsp butter, liquid, cooled a bit 1 egg yolk 70 g flour 1 pinch of salt 1 tbsp vanilla sugar 1 knife point baking powder 1 egg white, beaten stiff 2 apples (each around 140 g) 3 tbsp cinnamon-sugar Preparation: 1. Mix the milk, butter, vanilla sugar and egg yolks together well. 2. Mix the flour, salt and baking powder and add to the wet mix. Stir well. Let rest for approx. 20 minutes. 3. Pull in the stiff egg white. 4. Peel the apples, cut out the core, cut into 8 approx. 8mm thick rings, place in the prepared baking dish, pour the dough over them. 5. Bake in the middle of the oven preheated to 200 degrees for about 20 minutes. (Alternative: Coat the rings with dough and bake them in hot oil in a pan on both sides until brown.) 6. Ingredients: 1 cup smooth unsweetened applesauce 1/2 cup granulated sugar 1/2 cup packed light brown sugar 2 large eggs 1/4 cup canola or vegetable oil 1 tsp vanilla extract 2 cups flour 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1/2 tsp cinnamon 1/8 tsp nutmeg 1 cup peeled cored, and finely diced apple (1 apple) Caramel Glaze: 5 tbsp butter 3 tbsp caramel ice cream topping 1 1/2 cups powdered sugar dash salt Preparation: 1. Spray a 9- by 5-inch loaf pan with non-stick spray, then set it aside. Preheat the oven to 350° F (175° C). 2. Combine the applesauce, sugar, brown sugar, eggs, oil, and vanilla extract in a large bowl. Whisk well to blend. 3. Add in the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Stir just enough to combine; do not over mix. Fold in the apples. 4. Transfer the batter into the prepared pan. 5. Ingredients: 2 apples 5 sheets white bread 30 gr grated cheese 4 tbsp sugar 2 tbsp melted margarine 350 ml liquid milk 1 tbsp Vanilla Essence Topping: Choco chips Preparation: 1. Cut the white bread in squares. Peel the apple and cut it into small pieces. 2. Mix sugar and liquid milk, then add grated cheese, melted margarine and vanilla essence, stir well. 3. Then add the apple, stir, then finally add the toast, stir slowly until smooth. 4. Prepare a container (e.g. aluminum foil cup) then add enough apple mixture, do it until the batter runs out, then top it with choco chips. 5. Bake in the oven on ​​medium heat for 45 minutes. Pistachio milk rice with baked apple rings

Ingredients: 1 liter milk 250 g milk rice 1 lemon 60 g pistachio kernels 60 g almonds 1 egg 70 ml milk 100 g flour 3 apples 6 tbsp butter lard mint leaves powdered sugar Preparation: 1. Boil the milk and rice with constant stirring, reduce the heat and, with the lid closed, cook gently over low heat for approx. 20 minutes, stir once, switch off the oven and let it rest for 10-15 minutes.  2. Meanwhile, wash lemon, dry, rub 1 tablespoon of shell.  3. Finely grind pistachios and almonds in a food processor, put everything under the cooked milk rice, keep warm. 4. Poor Knight with Apples

Ingredients: 2 sour apples 50 g butter 3 tbsp honey 250 ml milk 2 eggs 1 pinch cinnamon 1 tbsp icing sugar 4 slices wheat toast bread 300 g heavy sour cream (Schmand) Preparation: 1. Wash apples, cut in half, core and cut into thin slices. 2. Melt 1 tbsp butter in a pan and fry the apple slices in a medium heat from both sides for about 2 minutes. 3. Add honey and 3-4 tablespoons of water and let the apples stew until the liquid is boiled away and the honey is caramelised. 4. Remove the pan from the heat. 5. Whisk milk, eggs, cinnamon and icing sugar and soak the toast slices in it. 6. Melt the rest of the butter in a pan, fry the slices of bread from both sides until crispy, then halve diagonally and place on plates. 7. Kate's heaven and earth dessert

Ingredients: 2-3 apples 1-2 sweet potatoes raisins to taste chopped almonds to taste about 150 ml maple syrup or honey diluted with water cornflakes butter Preparations: 1. Peel and pre-cook the sweet potatoes. 2. Wash the apples, core them. 3. Slice sweet potatoes and apples. 4. Grease a baking dish and preheat the oven to 200 degrees. 5. Alternately place the apple and sweet potato slices in the greased baking dish, adding raisins and almonds as desired. 6. Pour maple syrup over it. 7. Top up with a layer of cornflakes and add some butter flakes. 8. Scottish apple crumble

Ingredients: For the apple base: 550 g cooking apples, weight when peeled, cored and sliced 3 tbsp water 50 g caster or soft brown sugar ½-1 tsp mixed spice For the crumble topping: 150 g rolled oats 85 g plain flour 85 g margarine 115 g soft brown sugar Preparation: 1. Preheat the oven to 180 °C/gas mark 4. 2. Put the apples with the water, sugar and spice into a pie dish, cover and bake for 15 minutes. 3. Mix the rolled oats with the flour, melt the margarine in a pan and add the oat mixture and the sugar. 4. Mix well, then spread evenly over the apples. 5. Apple Pies Baked in Apples

Ingredients: 4 medium sized apples 1 premade 9 inch pie crust 1.5 tsp cornstarch 1 tbsp water 1/2 tsp cinnamon 1/4 cup granulated white sugar 1 egg whisked (for egg wash) Preparation: 1. Slice off tops of apples. Using small sharp knife hollow out the centre of the apples, leaving about 1/4 - 1/2 inch on the sides. Save the flesh for filling. 2. Dice the removed apple flesh into small cubes. You should have about 1 cup worth when you are done. Make sure not to include seeds, skin, or any of the core. 3. Preheat oven 350 degrees F. 4. Dissolve cornstarch in water. 5. In small pot, combine 1 cup of diced apples, cornstarch mixture, cinnamon and white sugar.  6. Cook for about 5 minutes until apples are soft and syrup is brown and thick. 7. Add apple pie filling to each of the hollowed out apples. 8. Apple Couscous

Ingredients: (two portions) 125 ml apple juice 125 ml of water 100g couscous 1 big apple a little lemon juice Preparation: 1. Boil the apple juice with water, pour over the couscous and leave for about five minutes. 2. Peel the apple, dice it, simmer in a little water with lemon juice and mix it under the couscous.
