Apple Muffins with Tofu

Ingredients:
120 g flour
30 g whole wheat flour
1 tsp cinnamon
1/4 tsp baking soda
100 g tofu (silk)
60 g soy milk
50 g canola oil
30 g beet sugar
2 tsp vinegar
pinch of salt
20 g raisins
1/2 apple (steamed)

Preparation:
1. Mix tofu, soy milk, canola oil, sugar, vinegar and salt in a bowl.
2. Add flour, whole wheat flour, cinnamon and baking soda and mix roughly.
3. Add raisins.
4. Fill dough into muffin forms.
5. Slice apple and put slices on top of the dough.
6. Preheat oven to 170°C and bake 25 min.
