Ozlem's Mums Apple Cake

Ingredients:
1/2 cup sunflower oil (1 cup= 250 ml drinking glass)
2 eggs
1 cup sugar
1 cup milk
2-3 medium size apples of your choice (I like the sour sweet ones)
1 tbsp cinnamon
1 tsp vanilla extract (real vanilla extract if you can find it or the grains from 1 vanilla pod)
1 mini package baking powder (not baking soda)
1 cup white flour
1 cup raw walnuts/hazelnuts
1 pinch salt

Preparation:
1. Pre-heat your oven to 175'C.
2. Grease your pan and sprinkle some sugar to prevent sticking. Set aside.
3. Peal the apples and put them in cold water with the juice of half a lemon. 1 apple needs to be diced into 1 cm*1 cm cubes. And cut the other apple into half and then the halves into quarters. So from 1 apple you got 4 pieces. Then slice the quarter pieces around 2-3 mm thick. (This is for the top your cake)
4. Beat the eggs with sugar until the mixture is white and fluffy. Mix in the oil and milk.
5. Mix the dry ingredients and chopped walnuts/hazelnuts in a separate bowl and add in the wet mixture. Add the diced apples in the mixture and set it into a greased pan.
6. Decorate the top of your cake with the sliced apples and put in the oven for 45-50 minutes in total. 7. After the first 20-25 minutes cover the pan with aluminium foil so the sliced apples don't get burnt. You can see how you like it. You may prefer caramelised apples, then you don't cover it.
