Danish Apple Cake

Ingredients:
125 g wheat flour
160 g sugar
100 g butter or margarine
125 g almond or nut flakes
2 eggs
2-3 apples
grated peel of 1 untreated lemon

Preparation:
1. Whip eggs and sugar together to an airy mass and mix flour and grated lemon peel gently in.
2. Peel apples, remove apple core and cut into thin slices.
3. Pour dough into a baking pan (round or rectangular) with baking paper.
4. Put the apple slices in tight rows, tear cold margarine or butter on top and sprinkle with almonds or nut flakes.

Baking Time:
20-25 minutes in a 200° C preheated oven (convection 180° C). The cake may seem a little heavy when done.
