Baking Tips - Part 7

1. Creaming butter and sugar is a highly important baking step that people like to skimp on. 2. After baking, insert a long wooden skewer into the center-most part of the cake. If it comes out clean, turn off the oven and cool the cake on the counter. 3. Don’t overbake. 4. Use cooled baking sheets. 5. A combination of Baking Soda and Baking Powder is usually your best bet. 6. Invest in quality bakeware. 7. Toasting nuts. 8. Don’t over fill your pans. 9. The best chocolate contains only cocoa butter and no other fats. 10. When adding melted chocolate to a recipe, remember you are adding extra density and fat.

Simple Apple Cake

Ingredients: one glass flour one glass sugar three eggs apples Preparation: 1. Beat eggs well with sugar (about 15 minutes). 2. Little by little add the sifted flour and whisk everything. 3. Cut the apples on a plate to cover the tin and pour the dough evenly. 4. Bake for about 40 minutes at about 170 degrees, do not open the oven during baking. Rosemary-Apple-Tarte with berries and mascarpone

Ingredients: Dough: 1 tbsp rosemary needles 170 g wheat flour type 405 some flour for tarte form and work surface 100 g soft butter some butter to grease the form 1 tsp icing sugar 1 egg Filling: 50 g soft butter 50 g icing sugar 1 yolk 50 g of ground almonds 1 small lemon 600-800 g of apples 1 tbsp rosemary needles brown sugar to sprinkle Furthermore: 250 g mascarpone 250 g whipped cream 250 g fresh mixed berries icing sugar for dusting Preparation: 1. Finely chop the rosemary needles. 2. Mix flour, butter, icing sugar, egg and 1-2 tsp of cold water quickly into a smooth dough. 3. Wrap in foil and allow to rest in the fridge for about 1 hour. 4. Grease a tarte form (24 cm) with butter and sprinkle with a little flour. 5. Roll out the dough on a lightly floured work surface slightly larger than the tarte form. 6. Apple-cinnamon rolls

Ingredients: (15 pieces) For the yeast dough: 1 cube yeast 200 ml milk 80 g butter 80 g sugar 500 g flour 1 egg 1 tsp salt 1 tsp vanilla extract For the filling: 4 - 5 apples (for example Boskop or Elstar) 3 tbsp sugar 1/2 tsp cinnamon 1/2 lemon 70 g soft butter 4 tbsp sugar 1/2 teaspoon cinnamon Icing sugar for sprinkling Preparation: 1.) For the yeast dough, put milk and butter in a small saucepan and cook slowly on the stove over low heat until the milk is lukewarm and the butter has melted. Put the milk and butter mixture in a bowl. Crumble in the yeast and stir. Add sugar, flour, egg, salt and vanilla extract and knead into a smooth dough. If the dough is too sticky, then knead in a little more flour. Cover the yeast dough in a warm place for 1 - 2 hours. 2.) In the meantime, peel the apples, core them and cut into small pieces. Stir with 3 tablespoons sugar, 1/2 teaspoon cinnamon and the lemon juice and simmer in a saucepan for 5 - 10 minutes. 3

Ela's Mums Apple Cake

Ingredients: 1 glass- about 250 grams 4 eggs 1 glass sugar 2 glasses flour 1 glass ground nuts half a glass oil 1 tsp soda 1 tsp baking powder 4 smaller apples cut into large cubes Preparation: 1. Whisk eggs with sugar. 2. Add the rest of the ingredients, continue to whisk. 3. At the end add apples and stir lightly. 4. Bake 30-35 minutes at about 165 degrees Celsius.
